Phin S uses a three stage brewing process: Dual Bloom, Natural Seal and Gravity Flow.
The brew begins with the bottom opening sealed, allowing water to reach the coffee bed from both directions.
After the bloom, the coffee is allowed to soak before the bottom cap is removed.
As the main pour begins, the wetted coffee bed forms a natural seal. Gravity then draws water through the coffee bed and filter.
This is the Seal & Soak method.

Phin S is designed to brew without a paper filter.
The 52 opening pattern and lower filter geometry work together to support paperless flow while the filter plate geometry is designed to retain fine particles beneath the plate.
Without paper, the brew can retain more of the coffee’s natural oils and create a fuller body and mouthfeel.

Dual Bloom.
10 g of water enters from below, while 20 g is poured over the coffee from above.
This wets the coffee bed from both directions
Soak.
The coffee remains sealed and immersed for 100 seconds.
This allows the water and coffee to remain in contact before the flow is opened.
Natural Seal. Gravity Flow.
After the bottom cap is removed, the main pour begins.
The wetted coffee bed forms a soft natural seal, creating resistance as gravity draws water through the coffee and filter.

Phin S can be brewed
with a dose from 13 to 25 g.
- For the starting recipe, use: 13g coffee, 130g water, 1:10 ratio
- For a more concentrated brew, reduce the total water toward approximately: 1:6
- For a lighter brew, increase the total water toward approximately: 1:10
- For a lighter taste, bypass with 30-60g water
- For a cold drink, add more ice.
Why Dual Blooom ? What is Natural Seal ?
Phin S introduces water
from both directions.
- 10 g from below. 20-30g from above. The bottom water moves upward while the top water moves downward, allowing the coffee bed to be wetted from both directions. This helps create a more evenly wetted coffee bed .
- Once the bottom cap is removed and the main pour begins, the wetted coffee bed settles and forms a soft natural layer. This layer creates resistance to the water as gravity pulls it through the coffee bed. Natural Seal. Gravity Flow.
